You can read more about it here. I decided to participate, so I found a new soup recipe to try! Drum roll please... Yes, I know the name of the recipe is in the title of this post. Just humor me.
Mac 'N' Cheese Soup
(From Taste of Home, found here)
1 box of Macaroni 'N' Cheese
9 cups of water, divided
1 cup fresh broccoli florets
2 tbsp chopped onion
1 can (10-3/4 oz) condensed cheddar cheese soup
2-1/2 cups 2% milk
1 cup chopped fully cooked ham
Here are my ingredients minus the water. (I used minced onion instead. I don't recommend it!)
First, I set some water on to boil for the pasta.
While I was waiting, I broke the broccoli florets apart.
I also cubed the ham. I chose not to cut the rind off this time.
Once the water started boiling, I added the noodles from the box of Mac 'N' Cheese.
In another pot, I boiled 1 cup of water to steam the broccoli till they were a bright green. The onion is in there as well.
I just love the color in this photo.
When the noodles were plump, they were drained and set aside.
To the broccoli and onion, add the milk, cheese soup and cheese packet from Mac 'N' Cheese box. Let everything warm up.
Lastly, add the noodles into the soup, stirring to combine.
Ta-da! This soup was so quick and easy. My family agreed that it was too liquid for our preference; I won't add as much milk next time. I will probably play around with this a bit more to bump up the flavor.
