Tasty Tuesday: Easy Spaghetti Sauce

My challenge for myself this week was to find a recipe for spaghetti sauce that didn't require an hour of stirring. When I stumbled upon this recipe, I was really excited. It was so simple! I didn't follow the exact recipe, but I based what I did on it.


Easy Spaghetti Sauce
2 cans of diced tomatoes
(I used cans with added seasonings)
Salt to taste
Basil to taste
Oregano to taste
Ground Red Pepper to taste


This was super easy. It's pretty much an "O&D" recipe (or open and dump).


I combined the two cans of diced tomatoes with 1/2 tsp of salt, 1/2 tsp of oregano and a pinch of red pepper. The diced tomatoes I used already had oregano, garlic and basil added into them. I tasted the tomatoes before adding any seasonings.

Then I let it warm over medium heat until is started to bubble. I dropped several already warmed meatballs into the sauce before combining with spaghetti noodles.

It's beautiful!

It tasted pretty good for what it was. It had too much liquid in it. Next time, I will drain some of the liquid or use a can of tomato sauce in place of one can of diced tomatoes. I might try blending it with a stick mixer.
I can tell this is going to be a recipe I will experiment with throughout this year.

Ooh... Kay, here's one Grant and I made up together:

You need:
- 1/2 pound of ground beef or ground turkey
- carrots
- onion
- green pepper
- zuchinni
- can of diced tomato
- 1/3rd to 1/2 a can of tomato sauce just enough to thicken it
- garlic salt (to taste)
- oregano (to taste)
- spaghetti noodles

Cook noodles. Cook meat. While that is all cooking, chop all the veggies up to little bite size peices. Put the meat aside when it's done and use the same pan to "sautee" the carrots in a tiny bit of water and like half a teaspoon of olive oil (make sure this is a relatively large skillet). let those cook till they start to get soft.

Then add all the other veggies chopped up. after they start to look generally soft (they can soften a little in the sauce) add all the tomato products. Let simmer till you taste it and it's nice and soft. It should look pretty chunky. And voila! Serve over spaghetti noodles (we like wheat). Sometimes (ok always) we also put a a little cheese on top.

It's the chunkiest, yummiest, healthiest spaghetti recipe ever (of course I'm partial because Grant and I made it up) and it seriously only takes about half an hour. It's a lot faster than you would think and soooooooooooooooo good!

oops! I forgot to say ADD the spices to the sauce before serving it! LOL. Do that. It makes it yummier! :)
